Warm up with this easy, customisable veggie medley!

Perfect as a side or a main! Mix and match your favourite vegetables and seasonings to make it your own.

Ingredients:

Cobram Estate Extra Virgin Olive Oil
Murray River Salt
Moroccan seasoning
Brussel sprouts
Mushrooms
Carrots
Purple onion
Zucchini

Method:

  1. Chop all vegetables into bite-sized pieces.

  2. Line a baking tray with baking paper and spread the veggies evenly.

  3. Drizzle generously with Cobram Estate Extra Virgin Olive Oil.

  4. Sprinkle with Murray River Salt and Moroccan seasoning. Toss to coat.

  5. Roast in a fan-forced oven at 180°C for 30 minutes, or until veggies are golden and caramelised.

  6. Serve and enjoy!

Tips:

  • For extra protein, add tuna before serving.
