Lazy Lasagna
Perfect for cosy winter nights—quick, hearty, and family-approved!
Bernadette’s favourite twist is adding chilli tuna, but feel free to use your preferred protein.
Ingredients:
1 purple onion
Cobram Estate Extra Virgin Olive Oil
Italian herbs (optional, for extra flavour)
1 tin Roma tomatoes
1 tin brown lentils
Low-carb lasagna sheets (We love Qetoe's!)
1 tin tuna (chilli tuna for a spicy kick, or any tuna/protein you like)
1 jar of pesto
Method:
Dice the purple onion.
Sauté onion in a generous splash of Cobram Estate Extra Virgin Olive Oil until softened.
Add Italian herbs if using, and sauté for extra flavour.
Add in your jar of pesto.
Pour in the Roma tomatoes and brown lentils. (Medicura Tip: Squish the Roma tomatoes to release their juices for maximum flavour.)
Break the lasagna sheets in half and slide them into the pan.
Pour boiling water over the top to help cook the lasagna sheets.
Add the tin of tuna (chilli tuna for heat, or your choice of protein).
Cover with a lid and simmer for 10 minutes, or until the lasagna sheets are cooked to your liking.
Serve hot and enjoy!
