Minimal ingredients, one pot, and ready in just 10 minutes!

Ingredients:

1 purple onion
Chinese Five Spice
Murray River Salt
Soy Sauce
Cobram Estate Extra Virgin Olive Oil
850g Birds Eye Oriental Stir Fry Veggie Mix
2 salmon fillets
1 tin brown lentils

Method:

  1. Dice the purple onion.

  2. Heat a generous splash of olive oil in a pan over high heat. Add the onion and sauté until soft.

  3. Sprinkle with Chinese Five Spice and a pinch of Murray River Salt.

  4. Add the Oriental Stir Fry veggie mix and a splash of soy sauce to the pan.

  5. Cover and cook until the veggies are thawed.

  6. Add the brown lentils and stir to combine.

  7. Once you've stirred in the brown lentils, place the salmon fillets over the veggie-lentil mixture.

  8. Season with some Murray River salt and a splash of soy sauce.

  9. Cover the pan with a lid, turn down to a low heat and let the salmon steam.

  10. Before salmon is fully cooked, cover the salmon with the veggie-lentil mixture to let the flavours infuse.

  11. Cover again and allow the salmon to fully cook.

  12. Enjoy!
