500g packet of Birds Eye Cauliflower Rice
1 tin brown lentils
1 cup frozen corn
1 cup frozen peas
Handful of green beans
Splash of Cobram Estate Extra Virgin Olive Oil
Splash of soy sauce
Salmon fillets (1 or 2 depending on how many people you are feeding!)
Sea salt flakes

Method:

  1. Heat Cobram Estate Extra Virgin Olive Oil in a deep pan over medium heat.

  2. Add the diced onion and sauté until softened and fragrant, about 2-3 minutes.

  3. Add the cauliflower rice to the pan and cook on medium-high heat, stirring occasionally.

  4. Stir in a splash of soy sauce, ensuring the cauliflower rice is evenly coated.

  5. Toss in the corn, peas, lentils, and green beans. Cook for another 5 minutes, stirring occasionally, until the vegetables are heated through.

  6. Season the salmon fillets with a sprinkle of salt and place them on top of the veggie mixture. Cover the pan with a lid and let everything cook for 10-15 minutes, or until the salmon is cooked through and flakes easily with a fork.

  7. Remove the lid and serve! Enjoy a wholesome, balanced meal straight from the pan!
