Good Friday Fish Dish
This delicious, nutritious, and effortless one-pot fish dish is packed with omega-3s, vibrant veggies, and bold flavours.
It’s a wholesome meal that’s quick to make and is all cooked in one pot for easy clean up!
Ingredients:
500g packet of Birds Eye Cauliflower Rice
1 tin brown lentils
1 cup frozen corn
1 cup frozen peas
Handful of green beans
Splash of Cobram Estate Extra Virgin Olive Oil
Splash of soy sauce
Salmon fillets (1 or 2 depending on how many people you are feeding!)
Sea salt flakes
Method:
Heat Cobram Estate Extra Virgin Olive Oil in a deep pan over medium heat.
Add the diced onion and sauté until softened and fragrant, about 2-3 minutes.
Add the cauliflower rice to the pan and cook on medium-high heat, stirring occasionally.
Stir in a splash of soy sauce, ensuring the cauliflower rice is evenly coated.
Toss in the corn, peas, lentils, and green beans. Cook for another 5 minutes, stirring occasionally, until the vegetables are heated through.
Season the salmon fillets with a sprinkle of salt and place them on top of the veggie mixture. Cover the pan with a lid and let everything cook for 10-15 minutes, or until the salmon is cooked through and flakes easily with a fork.
Remove the lid and serve! Enjoy a wholesome, balanced meal straight from the pan!
