Ingredients:

1 egg
200g cottage cheese
400g brown lentils
1 packet of mushrooms
A pinch of Murray River Salt

Method:

  1. Remove the stems from the mushrooms and place the tops on a lined baking sheet.

  2. Whisk the egg in a bowl.

  3. Mix in the cottage cheese, brown lentils, and a pinch of salt.

  4. Scoop the lentil mixture onto the mushroom tops.

  5. Bake in the oven at 180°C for 30-40 minutes.

  6. Enjoy your protein-packed bites warm or straight from the fridge the next day!
