Sweet, tasty, perfect for on-the-go!

These choc chip muffins are the perfect family-friendly, protein-packed snack!

Ingredients:

  • 2 eggs

  • 1 zucchini

  • 1 banana

  • 140g choc chips (we used Noshu’s 97% Sugar Free Dark Choc Baking Chips)

  • 1/4 cup self-raising flour

  • 3/4 cup protein powder (we used Nutra Organics’ Unflavoured Thriving Family Protein + Multivitamin Powder)

  • Splash of vanilla extract

  • 1/4 cup Cobram Estate Extra Virgin Olive Oil

  • Pinch of salt.

Method:

  1. Mash the banana in a large bowl.

  2. Grate zucchini into the bowl and mix with banana.

  3. Add olive oil and vanilla extract. Mix well. (Olive oil keeps these muffins moist!)

  4. Crack in the eggs and mix.

  5. Add protein powder, self-raising flour, and salt. Stir until combined.

  6. Fold in the choc chips.

  7. Spoon mixture into muffin trays or moulds.

  8. Bake 180°C for 15-20 mins, or air fry at 160°C for 20 mins - your choice!

  9. Cool, remove from trays, and enjoy!
