We’re back with another cozy one-pot wonder!

This delicious and nutritious lasagna is perfect for chilly weather and guaranteed to be a hit with the whole family. Plus, it’s super easy to make—no extra pots or pans needed!

Ingredients:

Qetoe lasagna sheets
Cobram Estate EVOO
1 tin brown lentils
1 zucchini (grated)
3 carrots (grated)
1 onion (diced)
1 jar passata (or tomato paste)
Quorn meat-free mince (regular mince can be used for meat-eaters)
Murray River salt
Italian herbs (basil, oregano, thyme)

Method:

  1. Heat a generous drizzle of Cobram Estate EVOO in a large pan and sauté the diced onion. Season with Murray River salt and Italian herbs.

  2. Add the Quorn mince and cook until browned.

  3. Stir in the grated zucchini, carrots, lentils, and passata.

  4. Break the Qetoe lasagna sheets into smaller pieces and mix them into the pan.

  5. Add boiling water, ensuring the mixture is just covered. Simmer on low heat for 10 minutes, stirring occasionally.

  6. Once the lasagna sheets are tender, it’s ready to serve!

  7. (Optional) Sprinkle with parmesan cheese for a perfect finishing touch.
